Our own olive oil

More than 150 olive trees stand on the 8,000 square metres around our stone house on Mount Pelion, and they were here long before we were: the Pelion olive, also known as the Amfissa olive or Volioti. Most of them are an estimated 150 to 200 years old, with a few younger ones among them that were replanted at some point. The grove has belonged to the family since 2024. We harvest what it carries ourselves – by hand, in late autumn – and once a year it becomes our oil.

Nothing is sprayed: the trees grow without pesticides. The latest vintage came in at 0.2 % free acidity; the limit for extra virgin olive oil is 0.8 %.

The grove around our stone house has belonged to the family since 2024, and Dirk is the one who looks after it. He prunes the trees, lays out the nets in late autumn and beats the olives from the branches. What lands in the nets goes into crates and straight to the mill.

A good season yields around 250 litres. The trees give no more than that – and what ends up in the bottles is exactly that: grown without pesticides, pressed without additives.

How our oil is made

01Before the harvest the nets go down under the trees. Whatever comes off the branches lands in them.
02At the mill the olives travel across the shaker table. Leaves and twigs stay behind, the olives move on to be washed.
03At the end of the line the fresh oil runs out – this is what the new vintage looks like before it goes into bottles.
